Cost: €11.50 ‘The Axe’ Margherita Pizza

“Beautiful looking pie. Light airy crust with a fantastic chew and subtle crispness. There is a real tension in the dough and this translates into a very good texture.

The smokiness and the char add depth to the taste without overpowering it. The sauce is tangy, ripe, rich and in the right proportion. The cheese is equally well proportioned. It’s high quality Fior de Late mozzarella which is just melted. There is no sloppy wet centre or mess. What can honestly be said about this Margherita pizza is that everything is in balance and that is hard to find. There is no blandness and no disappointing parts. The overall flavour lingers. Did I mention how good the crust is?” Pizzas of Dublin
